| FOOD HOSPITALITY AND CATERING VISITS KINGFISHER BAY RESORT |

On Friday 23rd October, 44 Year 10 FHC students and support staff travelled to Fraser Island to visit the Kingfisher Bay Resort for a Hospitality experience. The visit was part of a Food Fusion Unit which incorporated food flavours from Asia and Native Australian Bush tuckers. These foods are used to create exotic and very fashionable dishes currently in demand as gourmet meals in the food industry. Students experienced a walk through the bushlands, seeking out and tasting the various native produce on the island, including native ginger roots, various berries, sugar sacs from March flies, and
lemon myrtle leaves. This followed a tasting of a range of other bush food spices and berries that are used in the resort kitchens to produce their signature dishes in the Sebelles Restaurant for Bush Foods.
A walk through the front and back of house – sections of the Sebelles Restaurant – followed by a talk from the head chef gave the
students an insight into how the resort handles its many customers through a variety of meal times, menus and working procedures. Safety and hygiene standards were also observed as the students saw first-hand the need for cleanliness in the commercial kitchens.
It was an excellent day out for all and thanks go to the support staff for their assistance on the day. Thanks also to Mrs. M. Lindsay and Mrs. J. Hellmuth for the organisation and co-ordination of the trip. Students’ behaviour was a credit to themselves and the school.
